Valencia’s local airport is a few km outside the city in Manises. There are also many flights in Europe to Alicante (El Altet, e.g. Norwegian Air) and a few to Castellón. Intercontinental flights mostly go to Madrid and Barcelona.
Bus
Try ALSA or GO Euro. (Comfortable medium-distance buses (e.g. from Madrid and Barcelona airports) mostly arrive at the station on Calle Menéndez Pidal in front of the riverbed park.)

Trains go from Sants Estación (Barcelona), Atocha (Madrid) or Alicante to Valencia. If you get the high speed train, it’ll take you to the Joaquín Sorolla station a little further south from the main Estación del Norte station in the city centre, but you’ll find a shuttle bus service just outside that will take you there if you show the driver your train ticket. (By foot it’s about 10 minutes.) There’s also a taxi rank.
From Valencia airport (Manises)
There are plenty of taxis (daytime to the city centre should cost about €25) outside the airport, but you can also take the Metro (about €5 from the airport until about midnight). From the airport, you can take both lines 3 and 5 (red and green) to the city centre.
